Steel-cut oats (also known as Irish oats) gets its name from the process by which it is produced – large steel blades chop the groats into two or three pieces, resulting in a texture that is chewier and coarser than other oats.
Old fashioned rolled oats are steamed, rolled, and dried before packaging. This process makes them cook and digest faster. Although rolled oats are good for you too, steel cut oats are even better. It takes a little longer for them to cook, but because it takes longer to digest them, they make you feel full longer.
Blueberry Coconut Irish Oatmeal
3 cups water
1 cup steel cut oats
1/4 tsp salt
honey
blueberries
sweetened coconut
In a medium pan, bring water to a boil. Add salt and oats. Cook for 20 minutes, stirring occasionally.
Add honey, blueberries, and coconut to taste. (I added bananas to mine too and it was even tastier.)
