Old Fashion Caramel Corn

It’s time for county fairs, state fairs, and carnivals. Fair food is so yummy. But it’s also pricey. There’s no reason you can’t make some of those things yourself at home. Old fashion caramel corn is one of those treats you should be making at home, creating memories with your family.

And look at these cute popcorn boxes we have in our store! They’re so fun and absolutely perfect for serving caramel corn just like you’d find at a state fair. And at only $1.89 for a package of 10, there’s no reason not to get some.

Old Fashion Caramel Popcorn

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup butter
  • 1/4 tsp. salt
  • 8 cups popcorn kernels

Instructions

  1. Place ¼ cup popcorn and 1 tablespoon oil into a large pot. Cover and shake over medium heat until popping stops.
  2. Repeat step 1 until all of the popcorn is popped.
  3. In a large frying pan over medium-high heat, add the brown sugar, corn syrup, butter, and salt.
  4. Stir constantly for 2 minutes. Remove the pan from heat.
  5. Pour mixture over popped popcorn. Stir until evenly coated.
  6. Place on cookie sheet. Bake at 250°F for 20 minutes.
  7. Finally, let your popcorn cool and enjoy!

Brown Sugar Oatmeal Pancake Bites

Pancake bites are all the rage right now and it makes perfect sense why. They’re perfect for school mornings. You can make a whole bunch in advance, portion them out into zip-top freezer bags, freeze them, and just pop them in the microwave for a quick but healthy breakfast. Pour some syrup in a cup for dipping the pancake bites into and you’re good to go. Your kids will love them. You’ll love them too.

What I like about these is that they’re made from scratch with whole wheat flour and rolled oats. I don’t know about anybody else, but I like the idea of my kids heading off to school with something in their stomachs that will stick with them until lunch. These do the trick.

They’re great for snacking too.

These would make a healthy after school snack with or without syrup.

They’re so quick to make. Double or triple the recipe and make enough for a whole month. It would seriously take you under an hour. That’s a winner in my book.

Would you like my maple flavored pancake syrup recipe? I grew up with homemade pancake syrup, so the first time I tried the store-bought stuff, I didn’t really like it. It’s too thick. To me, it’s basically just flavored and colored corn syrup. So, I’ve continued to make my own syrup.

Apple Slices with PBfit

Sliced apples with peanut butter is one of my very favorite healthy snacks. But when you start to think about all those calories in peanut butter, I tend to shy away from the peanut butter part of it and just eat the sliced apples part. When I discovered PBfit, that all changed. Per serving, there are over 100 calories less in PBfit that there are in regular peanut butter. Feel free to read all about PBfit over on this blog post.

PBfit is a great way to get your apples and peanut butter fix without all the calories, but what about the apples? What’s the easiest way to slice them? How do you keep them from going brown, especially if you plan on packing them in your kids’ lunch?

Easy Slicing

The best way I’ve found to slice apples is with an apple slicer/corer. This apple slicer is a quick and safe way to easily core and slice an apple. Place the apple on the countertop, stem side down. Simply push the slicing blades down over the apple, flip the protective cover underneath and pop the apple slices the rest of the way through the blades. I love this slicer. I’ve had one for years and I use it all the time. Believe me, it’s well worth the investment.

How to Stop Browning

Okay, but now what about the browning? After a cut apple sits out for a while it starts to brown. To stop your apple slices from browning, fill a bowl with cold water. It doesn’t really matter how large your bowl is. Just make sure it’s big enough to hold all your apple slices and some water. To the cold water, you will add 1/2 teaspoon of citric acid per cup of water. Don’t worry about being too exact, but do try to keep it close to this ratio. Too much citric acid will cause your apples to taste a little lemony.

Put your apple slices into the citric acid water and let them sit for about a minute. Pull them out onto a paper towel and let them dry a bit. Now you have apple slices that will stay bright all day. You can put them in your kids’ school lunch or keep them in the fridge for a healthy after school snack.
