Avocado and Artichoke Pasta Salad
14 ounce can artichoke hearts, drained
1 cup cherry tomatoes, halved
1 ripe avocado, peeled and cubed
1/4 cup grated parmesan cheeseDressing
1/4 cup olive oil
2 Tablespoons lime juice
1 Tablespoon minced cilantro
1 1/2 teaspoons lime zest
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
Cook pasta according to package directions.
Combine artichoke hearts, tomato, and avocado.
Add pasta and gently stir to combine.
