Buckeyes, also known as peanut butter balls. Buckeyes Peanut Butter Balls

For many, there’s no better combination than peanut butter and chocolate. So, today I have for you a recipe for buckeyes.

In case you’re wondering, they get their name from the nut of the buckeye tree in Ohio, which is a small, shiny dark brown nut with a light tan patch. Very much like what this amazing little treat looks like.

Valentine’s Day is just around the corner and you can’t go wrong with a batch of peanut butter and chocolate buckeyes nicely arranged on a plate for those you love.

 

Buckeyes Peanut Butter Balls

INGRIEDENTS

  •   coconut

INSTRUCTIONS

  • In a bowl, mix together almond flour, peanut butter, maple syrup/honey, and vanilla.
  • Roll into balls and refrigerate for 30 minutes.
  • In a small bowl, melt chocolate chips and coconut oil on 30 second increments in the microwave.
  • Once melted, use a fork to lower the balls into the chocolate, covering 2/3 of the ball in chocolate. Lift the balls back out and place on tray. Repeat until all are dipped.
  • Place balls in fridge for at least 15 minutes before eating.
  • Store in fridge.

NOTES

*Any flour alternative can be used. I choose almond for it’s texture and nutritional benefits.
*Start with 3/4 cup flour and add more as needed until you are able to roll into balls.

I just discovered PBFit and I am so seriously excited about it! It’s a peanut butter alternative that really isn’t an alternative because it IS STILL peanut butter. It’s made from gently roasted peanuts, but most of the oil has been extracted. With a little salt and some coconut palm sugar, PBFit is a low fat, low calorie peanut butter powder that tastes exactly like it should – like peanut butter.

PBFit: The New Peanut ButterYou reconstitute it with water, which cuts the calories down by 130 per serving. That’s huge! If you’re counting calories, peanut butter is usually not a great choice at 180 calories per 2 tablespoons. But peanut butter is such a comforting, familiar, and amazing flavor, that you just have to have it sometimes. PBFit has only 50 calories per 2 tablespoons, making it a definite can-have when you’re counting those calories.

There are so many ways you can use PBFit. Really, you can use it anywhere you’d use regular peanut butter. You can reconstitute it for a pb&j sandwich, peanut butter cookies, peanut butter on apple slices or celery…you name it. It’ll work.

You can also use it in its powdered form when making protein or breakfast shakes. I used it as a powder when I made these power balls and it was amazing! (The ones in the middle are coated in PBFit.)

I wouldn’t recommend eating the straight powder, though. Trust me. That’s the first thing I did when I opened my jar. It certainly doesn’t taste bad, but boy, was it DRY. Haha.

To reconstitute it, mix 2 tablespoons of PBFit with 2-3 teaspoons of water. Mix it together and eat it however you desire.

Peanut Butter Chocolate Power Balls and Spiced Fig Energy Balls

These little bites are the best thing ever when the snack attack strikes. Sweet tasting and nutrient packed, these power balls will satisfy you and help you through to your next meal. And at about 50 calories per bite, they won’t break your calorie bank either.

Dates are known for being high in dietary fiber, iron, potassium, and calcium. Figs are also an excellent source of calcium, iron, and potassium. Pecans are a great source of protein and are rich in magnesium. With all of these nutrients, you can’t go wrong with these power balls.

They’re a great snack item as well as an awesome treat to pack in school lunches.
