Whole Grain Strawberry Baked Donuts

Ah, donuts.  Who doesn’t like donuts?  The problem with donuts is that they’re usually fried.  (Not that fried donuts aren’t absolutely delicious.)  But if you’re looking to cut out or minimize fried foods, but you still have to have your donuts, baked donuts may be for you.  Or maybe even if you’re just looking for something different or super fun to bake.

These donuts are made with 100% whole grain.  I used whole wheat and barley flour.  The result is a soft, light, almost muffin-like texture.  The chopped strawberries burst while baking, leaving little pockets of strawberry deliciousness.  These are super yummy.  I seriously had to hide one from myself so my husband could have one.

We carry donut pans in our store.  We have a standard size donut pan and a mini donut pan.  I worked in our physical store for almost 5 years and always wanted these donut pans.  The reason I never bought one was because I knew I’d make donuts once and never use the pan again.  It’s been 7 years since I first eyed those pans and I finally caved in and bought one of each size.  And I’m not regretting it.  Nope.  I have a new obsession: baked donuts.  They’re so fun to make and so tasty.  I have plans for other donut flavors in the next few days.  And they take surprisingly little time to make.  They’re so fun to make.  You need to get yourself a donut pan.

Whole Grain Strawberry Baked Donuts

  • 1 cup whole wheat flour*
  • 1 cup whole barley flour*
  • 1/2 cup sugar*
  • 1 1/2 teaspoons baking powder*
  • 1/4 tsp salt *
  • 3/4 cup buttermilk
  • 2 eggs
  • 1/4 cup honey*
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract*
  • 1/2 cup strawberries, chopped into small pieces

Strawberry Glaze 

  • 1/4 cup strawberry puree
  • 2 cups powdered sugar*

  1. Preheat the oven to 400°F.
  2. Spray the donut pan with nonstick spray. Set aside.
  3. In a bowl, combine the whole wheat flour, barley flour, sugar, baking powder, and salt.
  4. In another bowl, combine the remaining ingredients.
  5. Pour the wet ingredients over the dry ingredients and stir until just combined.
  6. Spoon the batter into the pan. It’s easier and quicker if you put the batter into a large zip top bag, cut one corner and squeeze into the donut cavities in the pan.
  7. Bake mini donuts for 10 minutes and standard size donuts for 12 minutes or until a toothpick inserted in donuts comes out with just a few crumbs.
  8. Allow the donuts to cool in the pan for several minutes, then invert onto a cooling rack.
  9. Once cooled completely, dip in strawberry glaze.

Instructions for Strawberry Glaze:

  1. Combine strawberry puree and powdered sugar.  You may need more or less powdered sugar depending on how thick or thin you want your glaze.
  2. Dip donuts into glaze.
