Setting up your Ooni is straightforward, but a few tips will help you achieve great results from your first pizza. Before cooking, preheat the oven for at least fifteen to twenty minutes until the stone reaches proper temperature. An infrared thermometer helps you verify the stone is ready—aim for at least 750 degrees Fahrenheit at the stone surface.
Dough preparation matters as much as the oven. Traditional Neapolitan dough uses only flour, water, salt, and yeast, with no oil or sugar. The dough should be soft and slightly sticky, fermented for at least 24 hours for best flavor development. Form dough balls about 250 grams each for personal-sized pizzas that fit easily in the oven.
