Fresh Cake Yeast is also known as wet yeast, fresh yeast, or compressed yeast. It has been used for decades by veteran bakers and is still popular today.
Cake yeast is very perishable, requiring constant refrigeration to retain its freshness and activity. We recommend using it within 10 days of purchase unless put in smaller portions and frozen.
Kitchen Kneads® Cake Yeast is available in 1-pound cellphane-wrapped cakes. For traditional baking, dissolve cake yeast in warm (90°-95°F) liquids. Use 1/3 of a 2 oz. cake to rise up to 4 cups of flour. One 16-ounce cake is adequate for 96 cups of flour. Cake yeast is not recommended for use in one-hour or less bread machine cycles.
Preparation:
Compressed fresh yeast is crumbled and dissolved in lukewarm water or milk before being added to the rest of the ingredients. Fresh yeast must never come into contact with salt, which would make it inactive. On the contrary, sugar stimulates the effect of yeast when it is added to the dough in small amounts.
Use:
Cake yeast lets you make any dish that requires leavened dough, such as Pain de Campagne, brioche, pizza, baba, and fritters.
Storage:
Fresh yeast will keep for one week in the refrigerator if carefully wrapped to prevent it from drying out. It can also be frozen for several months and should be left to thaw in the refrigerator before use.

Kitchen Kneads® Brand Cake Yeast is available in 1-pound wax paper-wrapped cakes. For traditional baking, dissolve cake yeast in warm (90°-95°F) liquids. Use 1/3 of a 2 oz. cake to rise up to 4 cups, approximately 1-pound, of flour.
One 16-ounce cake is adequate for 96 cups of flour. For Bread Machines use on regular cycles with 80°F liquids. Cake yeast is not recommended for use in one-hour or less bread machine cycles.
For maximum control over fermentation and proofing, nothing compares with fresh yeast. Because it consists of live cells in a nutrient medium, fresh yeast requires refrigeration and will stay fresh for 2-3 months if stored between 36°F/3°C and 40°F/5°C.
The 1-pound blocks are shipped with cold packs. While we take pains to make sure that our fresh yeast is properly packed, we cannot be responsible for the freshness of the product when the delivery standard exceeds two days.
This product may arrive frozen depending on shipping, delivery times, and packaging. This is still fresh and perfectly good to use. Just allow it to come to room temperature, then use as you would fresh cake yeast.
NOTE: To ensure freshness, we will only ship fresh yeast Monday or Tuesday on 2 – 3 day or overnight delivery during hotter months and ground during winter, except to Hawaii, Alaska, and Puerto Rico (Will not ship there).
During hot months (above 75 degrees), there is an additional shipping fee for insulated packaging. All other orders will be refused and payments refunded. Shipping cost has been added to the price.
