Strawberry Shortcake Cupcakes

Here’s one last tribute to summer before it officially-according-to-the-calendar ends.  Feast your eyes (and tongue) on these.  We’ve combined strawberry flavored cupcakes with the ultimate whipped cream-like frosting to give you a little strawberry shortcake dessert that is to die for!

Strawberry Shortcake Cupcakes

The Cupcakes

1 box White or Vanilla Cake Mix
3 Eggs
1/3 cup Oil
1 cup Water
1/2 cup Strawberry Flavored Syrup*

Line cupcake pan with cupcake liners.  Mix all ingredients with a whisk until fully incorporated.  Fill 24 cupcake liners 2/3 full.  Bake at 325 for 18-20 minutes or until a toothpick inserted in center comes out with a little crumb on it.

*Strawberry Flavored Syrup is a flavoring syrup used for Italian sodas.  It is very versatile and can be used to flavor anything from hot chocolate to cake.  It is available at our store.  However, we do not yet have it on our website, so if you would like to order it, please call us at 801-399-3221 or toll free at 1-888-881-9957.

Whipped Frosting 

5 T All-purpose Flour
1 cup Milk
1 tsp Vanilla
1 cup Butter (2 sticks)
1 cup Granulated Sugar (not powdered sugar)

In a small saucepan, whisk flour into milk and heat, stirring constantly, until it thickens. About 5 minutes. Be careful not to burn it. Remove from heat and let it cool to room temperature. You can place the saucepan over ice in the sink for about 10 minutes or so until the mixture cools if you are in a hurry. Stir in vanilla. This mixture must be completely cooled in order for the frosting to work.

While the mixture is cooling, cream the butter and sugar together until light and fluffy.  About 3 minutes. Then add the cooled milk/flour/vanilla mixture and beat until it all combines and resembles whipped cream. Make sure you scrape down the sides every so often so that it all gets incorporated and whipped. If it’s not looking like whipped cream, keep on whipping. This frosting is great for piping. Best served the same day.

Berry Glaze

2 1/2 T Red Berry Pie Tone
1/4 cup water

Mix to make berry syrup.

In a separate pan add:

3/4 cup water
1/3 cup + 2 T sugar

Bring to a boil, then add berry syrup.  Bring to a boil again and remove from heat.

*You can also use strawberry Danish Dessert. Just follow the package directions.

Assemble

After the cupcakes have completely cooled, pipe frosting on with a 1M piping tip.  (You could also spread it on with a knife or spatula.)  Drizzle berry glaze over the tops.  Top with two strawberry slices and either a mint leaf or a cilantro leaf.
