Your Ankarsrum Assistent Original is built to last decades. Proper cleaning after every use and periodic maintenance ensure it performs like new for years. This guide covers daily cleaning routines, deep cleaning schedules, stainless steel care, and when to replace wear parts.

The Ankarsrum Assistent Original is Swedish-engineered to last a lifetime. Many Ankarsrum mixers in Scandinavia have been in daily use for 30 or 40 years with nothing more than basic cleaning and occasional part replacement. The key to this longevity is consistent care — cleaning after every use and performing periodic maintenance checks.

Bread dough is one of the most demanding substances a kitchen appliance encounters. Flour and water combine into a sticky paste that hardens like concrete if left to dry. Butter and oil leave residues that can turn rancid. Salt is mildly corrosive to stainless steel over time. By cleaning promptly and thoroughly after each baking session, you prevent all of these issues before they start.

This guide is organized into two sections: daily cleaning (what you do after every use) and periodic deep cleaning (what you do monthly or quarterly). Follow both, and your Ankarsrum will still be kneading perfect dough when you pass it down to the next generation.

Daily Cleaning — After Every Use

This routine takes about five minutes and should be done immediately after every baking session. The single most important habit is cleaning before dough dries. Wet dough wipes off in seconds; dried dough requires soaking and scrubbing.

Remove the roller and scraper from the arm

Slide both attachments off the arm immediately after kneading. Dried dough is much harder to remove. If you clean within five minutes of finishing, most dough residue wipes off with a damp cloth.

Wash the roller and scraper in warm soapy water

Use mild dish soap and a soft sponge or cloth. The roller is a solid cylinder that cleans easily. The scraper has a flexible edge — pay attention to where the flexible part meets the rigid mounting, as dough can hide in that seam. Rinse thoroughly.

Remove and wash the bowl

Lift the stainless steel bowl off the rotating platform. Wash with warm soapy water and a non-abrasive sponge. The bowl is dishwasher safe, but hand washing is gentler and takes less than a minute. For stuck-on dough, fill the bowl with warm water and let it soak for 10 minutes before washing.

Wash the bowl lid / splash guard

The transparent plastic lid collects flour dust and occasional dough splatter. Wash with warm soapy water. Inspect the underside where flour tends to accumulate along the edges. This part is also dishwasher safe.

Wipe down the arm assembly

Use a damp cloth to wipe the arm that holds the roller and scraper. Dough can accumulate on the arm post and the locking mechanism. Do not submerge the arm — just wipe it clean.

Wipe the motor base and platform

Use a damp cloth to wipe the exterior of the motor base, paying special attention to the rotating platform where the bowl sits. Remove any flour, water, or dough residue. A clean platform ensures proper bowl contact and smooth rotation. Never submerge the motor base or pour water over it.

Dry everything completely before reassembling

Water left on the platform can cause the bowl to slip during the next use. Water on metal parts can cause water spots or, over long periods, surface corrosion. Dry all parts with a clean towel before putting the mixer back together or storing it.

What NOT to Do

These common mistakes can damage your Ankarsrum or shorten its lifespan. Avoid them and your mixer will reward you with decades of reliable service.

Never submerge the motor base in water or run water over it — the motor and electronics are not waterproof
Never use abrasive scrubbers (steel wool, Brillo pads) on the stainless steel bowl — they scratch the surface permanently
Never put the motor base or arm assembly in the dishwasher — hand wipe these parts only
Never use bleach or harsh chemical cleaners on any part — mild dish soap is all you need
Never leave wet dough to dry on the roller or scraper — it hardens and is very difficult to remove
Never use a metal utensil to scrape dried dough off the bowl — it scratches the stainless steel surface
Never store the mixer with the bowl lid sealed if any moisture remains inside — mold can grow in the enclosed space

Deep Cleaning & Periodic Maintenance

Beyond daily cleaning, your Ankarsrum benefits from periodic deep cleaning and inspection. These tasks ensure that wear parts are in good condition, the motor stays cool, and the bowl maintains its luster. None of these tasks require tools or special skills.

Stainless steel bowl polish

Monthly or as needed

Over time, the stainless steel bowl may develop water spots, discoloration, or a dull appearance. Use a stainless steel cleaner or make a paste of baking soda and water. Apply with a soft cloth, rub gently in the direction of the grain, rinse, and dry. For stubborn stains, a mixture of equal parts white vinegar and water works well. Avoid abrasive scrubbers that can scratch the surface.

Roller bearing inspection

Every 3-6 months

The roller should spin freely on its axis. Give it a spin with your finger — it should rotate smoothly with no grinding or rough spots. If the roller feels stiff or gritty, there may be dried dough in the bearing. Soak the roller in warm water for 15 minutes, then spin it several times to flush out debris. Scraper flexibility check

Every 3-6 months

The scraper blade should be flexible enough to bend when pressed against the bowl wall. Over time and with heavy use, the flexible edge can become stiff or develop cracks. Inspect the edge visually and flex it gently with your fingers. If it has lost significant flexibility or shows cracks, replace the scraper. A stiff scraper does not fold dough properly and can slow the bowl rotation.

Platform drive mechanism cleaning

Every 6 months

The rotating platform has a drive mechanism underneath that connects to the motor. Remove the bowl and inspect the platform surface for built-up flour or dough residue. Use a slightly damp cloth to clean the platform surface and the area around the drive coupling. Avoid getting water inside the motor housing. A clean drive mechanism ensures consistent bowl rotation speed.

Motor base ventilation check

Every 6 months

The motor base has ventilation openings that allow air to cool the motor during operation. Check these vents for accumulated flour dust or debris. Use a dry, soft brush or compressed air to gently clear any blockages. Blocked vents can cause the motor to overheat during extended kneading sessions.

Power cord inspection

Every 6 months

Inspect the power cord for fraying, cracks, or damage, especially near the connection points at the mixer and plug. A damaged power cord is a safety hazard and should be replaced immediately. Do not use electrical tape as a permanent fix — contact Kitchen Kneads for a proper replacement cord.

Stainless Steel Bowl Care

The 7.4-quart stainless steel bowl is the workhorse of your Ankarsrum. It comes in contact with every ingredient and endures the mechanical action of the roller and scraper during every baking session. With proper care, it will maintain its shine and performance indefinitely.

Removing Water Spots

Water spots form when mineral-rich water evaporates on the bowl surface. Wipe the bowl dry immediately after washing to prevent them. For existing spots, dampen a soft cloth with white vinegar and rub gently. Rinse and dry. The spots will disappear instantly.

Removing Discoloration

Some foods, especially those with high acidity or strong pigments, can cause temporary discoloration. A paste of baking soda and water applied with a soft cloth will remove most discoloration. For persistent stains, Bar Keepers Friend (a mild oxalic acid cleanser) works wonders on stainless steel.

Restoring Shine

Over years of use, the bowl surface may lose its original luster. A few drops of food-grade mineral oil on a soft cloth, rubbed in the direction of the grain, can restore a beautiful shine. This also creates a thin protective layer that helps prevent future water spots.

Dealing with Scratches

Light surface scratches are normal and do not affect performance. They are caused by the roller and scraper during kneading. These fine scratches actually help the dough grip the bowl wall, which improves kneading efficiency. Do not try to polish out these scratches — they are a sign of a well-used bowl.

When to Replace Parts

Even with perfect maintenance, some parts are designed to be replaced after extended use. The Ankarsrum is engineered with replaceable wear parts so the mixer itself lasts indefinitely. Here is when to consider replacements.

Roller & Scraper Set

Replace when the scraper blade loses flexibility, develops cracks, or no longer presses evenly against the bowl wall. For heavy home use (baking 3+ times per week), expect to replace every 2-3 years. For occasional use, they can last 5+ years. A worn scraper is the most common reason for declining kneading performance.

Stainless Steel Bowl

The bowl rarely needs replacement. Deep dents or cracks are the only reasons to replace it. Surface scratches and patina are normal and do not affect performance. If the bowl no longer sits flat on the platform (wobbles), check for dents on the bottom before replacing.

Bowl Lid / Splash Guard

Replace if the lid becomes cracked, warped, or no longer fits snugly. Plastic lids can warp if exposed to high heat (near an oven or in a hot dishwasher cycle). A good-fitting lid prevents flour from escaping and keeps the dough from drying during long kneading sessions.

Drive Belt (if applicable)

Some Ankarsrum models use an internal belt to drive the bowl. If the bowl begins to slip or rotate unevenly even after cleaning the platform, the drive belt may need replacement. This is a service item that Kitchen Kneads can help with.

Storage Tips

How you store your Ankarsrum between uses matters, especially if you bake infrequently. Proper storage prevents dust accumulation, moisture problems, and accidental damage.

On the Counter (Frequent Use)

If you bake weekly or more, keep the Ankarsrum on the counter. Place it on a stable, flat surface away from the stove and sink. The bowl lid helps keep dust out between uses. Make sure the area around the mixer allows the arm to swing freely.

In a Cabinet (Occasional Use)

If you bake monthly or less, store the mixer in a dry cabinet or pantry. Ensure all parts are completely dry before storing. Place the roller and scraper inside the bowl for compact storage. Leave the bowl lid slightly ajar to allow air circulation and prevent any trapped moisture from causing issues.

Long-Term Storage

For extended storage (months), clean thoroughly, dry completely, and consider placing a sheet of paper towel inside the bowl to absorb any residual moisture. Store in the original box if you still have it. Wrap the power cord loosely — never bend it tightly, as this can damage the internal wires over time.

Avoid These Storage Locations

Never store the Ankarsrum in a damp basement, unheated garage, or outdoor shed. Temperature extremes and humidity are enemies of both the motor and the stainless steel surfaces. The ideal storage environment is a dry, room-temperature location with stable conditions.
