This Greek Cucumber Salad is so amazingly delicious and it’s easy to make slight alterations to. What? Alterations? Yes. As you work at this salad and make it your own, you can easily tweak and make even more beautiful flavor combinations. Kalamata olives are meaty and divine, you can add green tomatoes for a bright and acidic splash, green onions are a dream of a pungent and savory addition, and of course you cannot forget amazing feta cheese that is so creamy and salty. In this version, I used champagne vinegar for its subtleness. However, you can substitute white wine vinegar if you don’t have it. Lastly, you can play around with your peppercorn choices. I used green peppercorns, as they offer a slightly different pepper kick than the normal black variety. But black peppercorns are also amazing!
