The Ankarsrum works differently from any mixer you have used before, and taking a few minutes to set it up properly will ensure you get the best results from day one.
This guide walks you through every step from unboxing to your first successful batch of bread dough. The Ankarsrum's unique roller and scraper system is intuitive once you understand the basics, but the initial setup does have a few details that are worth getting right. If you follow this guide, you will be kneading perfect dough within the hour.
Unlike conventional stand mixers where a hook spins inside a stationary bowl, the Ankarsrum reverses the relationship: the bowl rotates while the roller and scraper stay in a fixed position. This means assembly and positioning are different from what you may be used to, but the process is straightforward.

Initial Cleaning Before First Use
Before you use your Ankarsrum for the first time, every part that will touch food needs to be washed. Manufacturing residues, dust from packaging, and protective coatings should all be removed. This is a quick process that ensures your first batch of bread tastes like bread, not cardboard.
Remove all packaging materials
Take the bowl, roller, scraper, and arm assembly out of their protective packaging. Check inside the bowl for any cardboard inserts or plastic film.
Wash the bowl in warm soapy water
The stainless steel bowl is dishwasher safe, but a first hand wash is recommended. Use mild dish soap and a soft cloth. Rinse thoroughly and dry completely.
Clean the roller and scraper
Wash both attachments with warm soapy water. The roller is a solid cylinder that cleans easily. The scraper has a flexible edge, so be gentle but thorough.
Wipe down the motor base
Use a damp cloth to wipe the exterior of the motor base. Never submerge the motor base in water or run water over it. Pay attention to the bowl platform area.
Dry everything completely
Ensure all parts are fully dry before assembling. Water left on the bowl platform can cause the bowl to slip during initial use.
Attaching the Roller & Scraper
The roller and scraper are the heart of the Ankarsrum's kneading system. Proper positioning is the single most important factor in getting great results. The roller presses dough against the rotating bowl wall to stretch it, while the scraper peels the dough off and folds it back toward the center. Together, they replicate the stretch-and-fold motion of hand kneading.
Swing the arm assembly over the bowl
The arm pivots from the back of the mixer to position over the bowl opening. It should move freely and lock at the desired position.
Attach the roller to the arm
The roller slides onto the arm post and is secured with the locking mechanism. It should spin freely on its axis when properly attached. The roller should hang about one-quarter inch above the bowl bottom.
Attach the scraper behind the roller
The scraper attaches to the same arm, positioned behind the roller relative to the bowl rotation direction. The flexible edge should lightly touch the bowl wall.
Adjust roller distance from bowl wall
The arm has an adjustment mechanism to move the roller closer to or farther from the bowl wall. For bread dough, position the roller about 3 to 5 millimeters from the wall. The dough will fill this gap.
Adjust scraper angle and pressure
The scraper should press lightly against the bowl wall to fold dough back toward the center. Too much pressure slows the bowl; too little lets dough ride past without folding.
Bowl Positioning & Seating
The Ankarsrum bowl sits on a rotating platform driven by the motor. Correct bowl positioning ensures smooth rotation and prevents wobbling or slipping during heavy kneading.
Center the bowl on the platform
Place the bowl directly in the center of the rotating platform. The bowl should sit flat with no rocking. If it wobbles, lift it and reseat it. The platform has a slight lip or guide to help center the bowl.
Ensure the drive connection is engaged
The bottom of the bowl has a drive coupling that connects to the motor platform. You should feel it click or seat into position. Give the bowl a gentle twist to confirm it is engaged. When the motor runs, the bowl should rotate smoothly.
Check for smooth rotation before adding ingredients
Turn the mixer on briefly at the lowest speed with the empty bowl to confirm it rotates smoothly. Listen for any grinding or uneven sounds. The bowl should spin quietly and evenly. If it does not, remove and reseat the bowl.
Keep the platform clean and dry
Flour, water, or dough residue on the platform can cause the bowl to slip or rotate unevenly. Wipe the platform clean before each use. A dry platform provides the best grip between the bowl and the drive mechanism.
Using the Timer Arm
The Ankarsrum includes a built-in timer that automatically stops the mixer after a set duration. This is an enormously useful feature for bread baking because kneading time is critical. Over-kneading or under-kneading both produce inferior bread, and the timer lets you set it and walk away with confidence.
Setting the Timer
The timer dial is located on the top of the mixer near the speed control. Turn it clockwise to set the desired kneading duration. The markings indicate minutes. When the timer counts down to zero, the mixer automatically shuts off. You can set it for up to 30 minutes for longer kneading sessions.
Continuous Mode
If you want the mixer to run without a timer limit, turn the timer past the marked range to the continuous position. The mixer will run until you manually turn it off. This is useful when you are actively monitoring the dough and want to stop it at the precise moment gluten development is complete.
Typical Bread Dough Times
Most bread doughs need 8 to 12 minutes of kneading in the Ankarsrum. Set the timer to 10 minutes as a starting point. You can always add more time if the windowpane test shows gluten is not fully developed. Enriched doughs with butter and eggs may take 12 to 15 minutes.
Timer for Rest Periods
Some bakers use the timer creatively by mixing for a few minutes, letting the dough rest (autolyse), and then resuming. The timer helps you remember when the rest period is over if you set a separate kitchen timer. The dough can rest right in the Ankarsrum bowl.
Tips for Your First Batch
Your first batch in the Ankarsrum is a learning experience. These tips will help you get excellent results right away while you familiarize yourself with how the roller and scraper system works.
Start with a simple white bread recipe
For your first batch, use a basic white bread recipe with moderate hydration (around 65%). This lets you observe how the roller and scraper work without the added complexity of whole grains or high hydration. A simple recipe of flour, water, yeast, salt, and a touch of oil is ideal.
Add liquids first, then flour
Place your water and any liquid ingredients in the bowl first, then add flour gradually while the bowl is rotating on low speed. This prevents dry flour from flying out and ensures even hydration from the start. The roller will begin pressing the forming dough against the wall naturally.
Start on the lowest speed
Begin mixing at the lowest speed setting. The Ankarsrum is powerful, and low speed is sufficient for initial mixing. Once the dough comes together and all flour is incorporated, you can increase to a medium speed for kneading. Most bread doughs knead well at speed 2 to 3.
Watch the roller in action
Observe how the rotating bowl carries the dough toward the roller, which presses it against the wall in a stretching motion. The scraper then peels the dough off the wall and folds it back toward the center. This stretch-and-fold motion is exactly what develops gluten in bread dough.
Do not over-knead on your first try
A typical bread dough needs 8 to 12 minutes of kneading in the Ankarsrum. Check your dough at 8 minutes by pulling off a small piece and stretching it thin. If it forms a translucent windowpane without tearing, gluten is fully developed. If it tears, knead for 2 more minutes and check again.
Use the bowl lid for longer mixes
The splash guard lid keeps flour from escaping and prevents the dough from drying out during extended kneading. It also reduces mess if you are adding ingredients while the mixer is running.
