Spelt is an ancient grain. This means that the grain has not undergone any genetic modification, and is easier to digest. It is long and pointed in shape with a dark blonde color and a mild flavor. Spelt is a delicious and versatile ingredient with lower gluten levels than wheat used in bread, cookies, muffins, quick bread, pan bread, pizza, pie crusts, flatbread and pasta. Spelt is a good source of protein, dietary fibers, phosphorous, and manganese.

Spelt berries are wonderful grains that are high in protein. Spelt contains 15 – 21% protein which is much higher than wheat. It’s also higher than wheat in complex carbohydrates, iron, potassium and the B Vitamins. Spelt is easier to digest than wheat products because of it’s higher solubility in water. Spelt also contains nutrients that aid in blood clotting and also stimulate the immune system.
